The fries were pretty soggy, but their flavor was ok. I know bbq isn’t cheap to make, but when the prices are on par with places like Joes KC BBQ, I’m going to expect some pretty decent grub. That earned them a second star, and also makes this much harder to write. I’ll start with the good: They were super friendly. I had to wait quite a while for my meal, but damn the food is worth the wait! I hope this is just a growing pain that will get figured out as traffic gets more predictable. Generous hand-made patty with perfect sear, tender, and smokey flavor! Dare I say best burger in the city? My only complaint, and why I have 4 instead of 5 stars on the place, is they haven’t figured out how to service a crowd a yet. Oh, and I got my daughter a burger, and it was amazing! I’ll be dropping by to get my burgers here now too. The beans look very good, but I’ve yet to try. In fact, I only think Jack Stack does it right, but now I think Fireside makes a very respectable second place, and everyone else isn’t even close. I’ve only had the cheesy corn and fries, but both our very solid sides. I have also had the pulled pork, and it’s probably my 2 nd or 3 rd favorite in the city to Joe’s KC and Danny Edwards. Point is that I’d put them up there with the best. Well seasoned and very nice smoke flavor. It’s really hard to strike the perfect balance of crunchy burnt exterior and tender interior, and I think Fireside hits this balance as best as I’ve ever had. Hard to say now with so many good ones like Jack Stack, Q 39, CharBar, Jon Russell’s. The burnt ends here are fantastic, and maybe the best in the city. I put Jack Stack as the gold standard for all-around bbq and sides, and Brobecks on the other end of the spectrum with amazing ribs and the worst sides you’ll ever have at a BBQ joint. Then, if the sides are good, all the more power to a place. Fireside BBQ is very good! I’m a burnt ends type of BBQ eater, so I judge most places by that. I consider myself a connoisseur of BBQ having lived in KC all my life and eating it consistently for 40 years.
